I got this recipe a while back. When I started on the paleo I cut out anything bad and I was starting to crave "sometimes food" so I finally made this, this morning and yummy... It's rich and it satisfies the urge. Thanks Shan :)
3 tbs coconut oil
1/4 cup carob or cocoa (optional)
1/2 cup ground nuts (almonds, hazelnuts)
3/4 cup unsweetened shredded coconut
1 tbs raw honey (add more to taste)
Baking paper
1. Melt the oil and honey over medium heat in a saucepan
2. Once combined add the carob, ground nuts and coconut and mix
3. Pour mixture onto a small baking sheet . Once cool enough to touch mould into squares.
4. Refrigerate until hardened.

Pancakes
So I tried to make pancakes this morning and had no coconut flour and used almond flour instead.. Yep was a no go. So here is the recipe
1/2cup coconut flour
1 1/2 cup coconut milk
4 eggs
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
Mix together and cook

Tuscan chicken and Moroccan lamb skewers with cauliflower rice
This recipe depends on how many skewers you want to make and how much you want on each skewer.
Below made 8 skewers of each
2 small organic chicken breast diced
4 small lamb fillets diced
1 red and green medium sized capsicum diced
1 onion diced
Fresh pineapple cut into pieces
1 small sized cauliflower
Moroccan spice
Tuscan spice
1. Once you have diced the chicken and lamb place them in individual bowls and mix in the spice... add spice to your desire.
2. Put the ingredients onto your skewers and cook on the BBQ.
3. Cut up the cauliflower and cook. Once cooked put in the blender and pulse a couple of times until the cauli looks like rice.
4 serve and eat....

Sweet potato, bacon and egg salad
Made this last night and it was sensational...
1 medium to large sweet potato
2 eggs
8 rashes of bacon
4 tablespoons of dill
2 tablespoons of lemon juice
2 tablespoons of mayonnaise
1. Cut bacon and sweet potato into cubes
2. put into fry pan and cook until sweet potato is soft and bacon cooked
3. Boil eggs then cut up.
3. In a salad bowl but dill lemon juice and mayonnaise
4. Add the egg bacon and sweet potato and mix.
Serve either hot or cold
Please note I had a large sweet potato and I boiled 3 eggs and I also thought the 4 tablespoons of dill was a little to much .

Meatballs
I made these and I really really enjoyed them and so did the rest of the family .... I have taken the receipe from www.eatdrinkpaleo.com.au... I put ours on cauliflower & Broccilli mash... was awesome!
Basic meatballs
Makes about 12-14 meatballs.
300g each beef and pork mince
1 egg
1/2 medium onion, grated or finely chopped
1 tbsp olive oil
2 tbsp chopped flat-leaf parsley
2 garlic cloves, finely chopped
1 tsp sea salt
1/2 tsp black pepper
ghee, coconut or macadamia oil for frying
Sautee onion in olive oil on medium heat for 2-3 minutes or until translucent. Combine all ingredients, including the onion, and mix thoroughly using your hands. Make sure to knead the mixture for a few minutes to work the protein in the meat which will bind everything together. Wet your hands and roll the meat mixture into balls the size of a walnut in its shell. Heat a large frying pan, lightly coated with ghee oil. Brown the first side of the meatballs on high heat, then bring the heat down to medium and fry for 3-4 minutes. Turn and fry the other side on medium/low heat for 5 minutes. Keep turning to make sure all sides look visibly cooked. Total cooking time should be about 12-13 minutes. Remove from the pan and let the meatballs rest for a few minutes before serving.
Another method is to brown the meatballs for 2-3 minutes on each side and then finish cooking them in an oven for about 10 minutes at around 170C.
Meatballs are best served with a sauce, that’s why you will often see meatballs braised in tomato or wine sauce, or served with a condiment on the side. These basic meatballs are delicious with some tomato relish or with creamy mashed sweet potato or cauliflower.

Free range chicken strips
2-3 clove garlic or i use organic crushed garlic and put a couple of teaspoons in
1-2 tablespoons of sweet paprika
1/4 each green and red capsicum
2 carrots
1 red onion
2x bacon rashes
broccilli
1/2 - 1 cup of Coconut milk
Cashews
lettuce
1. Cut the red onion up and put it in the fry pan and put some garlic in with it.
2. Cut the bacon rashes into little squares and put into fry pan and cook.
3. Once onion and bacon cooked add your chicken strips.
4. Put the rest of your garlic in and your sweet paprika and cook.
5. Once cooked turn down and add the rest of your vegetables (no salad) and your coconut milk and cook until your vegetables are at your desired taste. I like my crunchy :) also add your cashews.

Chocolate Truffles
Mmmmmm looking for a treat??
300 grams of organic dark chocolate
3 tablspoons of coconut oil
1 cup full fat coconut milk
1 teaspoon vanilla extract
1/2 cup shredded coconut
cacoa
Makes about 32 depending on how big you make them
1. Put chocolate & Coconut oil in medium bowl
2. Heat coconut milk in a small saucepan over medium heat until simmering pour over chocolate and coconut oil and stir even and gently.
3. Add vanilla extract.
4. Transfer chocolate mixture to a sealed container and chill in the fridge until soild (at least 4 hours)
5. Meanwhile spread shredded coconut onto a baking tray and toast for 3-5 minutes or until golden brown.
6. Once chocolate has gone solid grab a watermelon scoop and scoop out a ball of chocolate. dip it in either the shredded coconut or the cocoa.
7. Serve and enjoy you TREAT :)

Egg & Capsicum Breakfast
Omg this is one of my favourite breakfast's to have and so easy.
Cut a ring from the centre of your capsicum red or green and not to thick... put it in the frypan with some coconut spray and let it cook for a couple of minutes. Then add your eggs to the centre of the capsicum rings. Cook up some bacon and spinach and serve.

Breakfast Smoothie
1 banana
1 mango
10-12 frozen strawberries/raspberries
a cup of coconut milk
and lots of ice
Mix it all in the blender... add more coconut milk to get your desired thickness.
